Ingredients
2 cups plain yogurt
2 tbsp. raspberry jam
1 tbsp. granulated sugar
1/4 tsp. vanilla extract
1 cup sliced strawberries
1/2 cup blueberries
1/2 cup raspberries
2 1/2 tbsp. sliced almonds, toasted, (see instructions below) or granola
Directions
Combine the yogurt, jam, sugar and vanilla in a medium size bowl.
Layer the yogurt mixture, strawberries, blueberries and raspberries (and repeat) in two parfait glasses or serving dishes.
Top each parfait with the sliced almonds or granola, and serve immediately, or make this yogurt parfait recipe ahead of time and cover and refrigerate them. Add the almond slices or the granola just before serving or else they will lose their crispness.
Serves 2.
How to Prepare the Toasted Almonds:
Toasting the almond slices add crunch to the yogurt parfait dessert or snack and intensifies the flavour of the nuts.
To toast the almonds in the oven, spread the nuts in a single layer on a shallow baking dish (or cookie sheet). Bake at 350° for about 3 to 4 minutes or until golden brown, stirring occasionally.
Be sure to keep a close watch, because they will burn very quickly!
Looking for a suitable glass to in which to serve the yogurt berry parfait?
You do not need to purchase expensive, special glasses to serve a parfait. Parfaits can be prepared and served in a large wine glass, a sherbet bowl, a clear juice glass, or any dessert glass.
You just need to keep in mind the size of the glass and how much you want to serve for each individual.
Typically, a dessert parfait is served in a smaller glass, and a breakfast or brunch parfait might be served in a larger glass.
