TIP - Freezing Cakes
I have found that most cakes store well in the freezer for up to a few weeks. If you have left-over cake which you wish to store in the freezer until a later date, simply apply a piece of waxed paper to the cut part of the cake, and freeze it in a sealed freezer-safe container.
If you freeze the cake within a day or two after it has been made, when you remove it from the freezer, it will taste almost like fresh!
