This Healthy Raspberry Chicken Salad is a great Chicken dish to make when the outside temperature is hot, as it will not make your kitchen extra warm.

It makes a light and colourful lunch or dinner...and it is quick and so easy too!

Ingredients

FOR THE DRESSING

1/2 cup honey
1/2 cup red wine vinegar or cider vinegar
4 tsps. soy sauce
1 garlic clove, minced
1/2 tsp. ground ginger
1/4 teaspoon salt
dash pepper

FOR THE SALAD

1 pound boneless skinless chicken breasts, cut into strips
1 tbsp. vegetable oil
1 tsp. butter or margarine
8 cups torn mixed salad greens
1 pint fresh raspberries
1/4 cup chopped pecans (or walnuts)

Directions

In a small bowl, combine the dressing ingredients.

In a large skillet, cook and stir chicken in oil and butter until no longer pink, drain.

Add 1/2 cup salad dressing, and cook 1 minute longer.

Place the salad greens in a serving bowl.

Top with the chicken, raspberries and pecans (or walnuts).

Serves 4.
