1 cup granulated sugar
2 tbsp. butter
1 egg, lightly beaten
1/2 cup milk
2 cups all-purpose flour
2 tsp. baking powder
2 cups fresh, red or black, raspberries
Directions
In a large bowl, combine the butter and the sugar and mix until creamy.
Add the lightly beaten egg, and mix well.
In a small bowl combine the flour and the baking powder.
Add the flour mixture, alternately with the milk until just combined.
Gently, so as not to break apart the raspberries too much, fold in the berries.
Batter mixture will be thick.
Pour batter into a greased, 9" x 9" baking dish.
Bake at 350° F for about 45 minutes, or until a toothpick inserted in the center comes out clean, and cake is golden in colour.
