This is the raspberry pie that I make most often for my family when our raspberry patch is ripe and ready to harvest!
It's not only a winner recipe in taste, but it is so simple to make.
And ... no need to get the kitchen all warm and steamy, this is a NO BAKE raspberry pie recipe!
You can make this pie using all fresh raspberries, or, as you can see in the photo images that I have done, you can mix in black raspberries, strawberries and /or other berries such as blueberries or even blackberries!
The crust is not of the regular, pastry dough, but rather an easy to make crust made from margarine and flour, a type of "shortbread" crust.
Ingredients
NOTE: If you are making a DEEP DISH PIE use the measurements in the brackets - they are 1 1/2 times the amounts listed for a regular size pie dish.
FOR THE SHORTBREAD CRUST
1/2 cup margarine (3/4 cup)
1 cup all-purpose flour (1 1/2 cups)
1/2 tbsp. sugar (3/4 tbsp.)
FOR THE BERRY FILLING
1 cup sugar (1 1/2 cups)
1 cup water (1 1/2 cups)
3 tbsps. cornstarch (4 1/2 tbsps.)
4 tbsps. flavoured jello powder (6 tbsps.)
3 cups raspberries or other fresh fruit (4 1/2 cups)
Directions
FOR THE SHORTBREAD CRUST
Combine margarine, sugar and flour in a bowl. Knead until well mixed.
Press above mixture into bottom and sides of a pie plate.
Make several "fork piercings" in the bottom of the pie plate crust to prevent crust from lifting/bubbling up during baking.
Bake crust in oven at 425° F for approximately 12 minutes, until crust is slightly coloured.

FOR THE BERRY FILLING
In a pan on the stove-top mix water and cornstarch together, and then add the sugar and stir well.
Bring the above to a boil till well thickened (rolling boil).
Remove from heat and immediately add the flavoured jello, mixing well.
While the mixture is still hot, stir in the fresh raspberries, and other fresh fruit as desired.
Allow pie to cool on counter, and then keep pie refrigerated (covered).
Before serving add a dollop of whip cream!
