This recipe for Raspberry Flapjacks uses almond flour to make the most yummy pancakes for breakfast, brunch or anytime!

For those who require a wheat free diet ... you will flip over these pancakes once you taste how delicious they are!
Ingredients
3 medium or large eggs
1 tbsp. water
1 tbsp. vanilla extract
2 tbsps. agave nectar
1 1/2 cups almond flour
1/4 tsp. salt
1/4 tsp. baking soda
grapeseed oil, for frying
1 1/2 cups fresh raspberries
Directions
In a bowl, whisk together the eggs, water, vanilla and agave nectar.
Add the almond flour, salt and baking soda to the above mixture and mix until well combined.
In a frying pan, or skillet, heat the grapeseed oil over medium heat.
Scoop a heaping teaspoon of batter into the skillet. When the bubbles appear and then open, flip the pancake and continue to fry the pancake on the other side.
Interested in making your own, homemade raspberry topping?
When cooked, remove the pancake from the skillet to a plate.
Repeat the above process until the batter is done, adding more of the grapeseed oil to the skillet as is needed.
Top with fresh raspberries.
Makes approx. 15 pancakes.
Serves 5 to 6.
