What is a Clafouti?
A clafoutis is a
rustic French baked dessert made by baking fruit in a custard-like
batter similar to pancake batter. It is something like a cross between a
flan and a pancake.
If you don’t want to make a crust but want something tart-like with fruit to serve for dessert, a clafoutis is a good choice. These desserts are very easy to make, and always elegant and impressive in look.
This Clafouti is made using whipping cream. The combination of the chocolate chips and the raspberries makes a delightful flavour that will be sure to take your taste buds for a ride!
Ingredients
2 cups fresh or frozen raspberries (do not thaw the berries)
1/2 cup semisweet chocolate chips
4 eggs
3/4 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup whipping cream (35% cream), not whipped
1/2 cup milk
1/2 tsp. almond extract
icing sugar for garnishing, optional
Directions
Scatter the raspberries and the chocolate ships in the bottom of a greased 10" deep-dish glass pie plate.
In a blender, combine the eggs, flour, sugar, whipping cream, milk and the almond extract, and blend until smooth.
Pour the batter over the raspberries and the chocolate chips in the pie plate.
Bake at 350° F for 55 to 60 minutes or until the clafouti is puffed, golden, and a knife inserted into the center comes out clean.
Allow to cool slightly, then slice and serve warm.
Serve with a sprinkling of icing sugar, if desired.
Serves 6 - 8.
This Clafouti recipe uses sour cream and milk instead of whipping cream. The topping of sliced almonds give this dessert this a special flavour!
Ingredients
2/3 cup sour cream
1/3 cup milk
8 tbsp. butter, melted, divided
3 eggs
1/2 tsp. vanilla extract
3/4 cup cake flour (or all-purpose flour)
1/8 tsp. salt
1/3 cup plus 2 tbsp. granulated sugar
1/4 sliced almonds, toasted (optional) (*see below for toasting information)
icing sugar for garnishing, optional
Directions
If desired, toast the sliced almonds (see instructions below).
Scatter the raspberries into the bottom of a greased 10" deep-dish glass pie plate.
In a bowl, using an electric hand mixer, mix together the sour cream, milk, 6 tbsp. of the melted butter, the eggs and the vanilla extract.
In another bowl, whisk together the flour, salt, and 1/3 cup of the sugar.
Mix the dry ingredients into the milk mixture and mix using an electric hand mixer until smooth.
Pour the batter over the raspberries in the pie plate.
Drizzle 2 tbsp. of melted butter over the top.
Sprinkle the top with 2 tablespoons of sugar and the sliced almonds.
Bake at 400° F for about 40 minutes or or until the clafouti is puffed, golden, and a knife inserted into the center comes out clean.
Allow to cool slightly, then slice and serve warm.
Serve with a sprinkling of icing sugar, if desired.
Serves 6 - 8.
*How to Toast Sliced Almonds
Toasting the almond slices add crunch to the yogurt parfait dessert or snack and intensifies the flavour of the nuts.
To toast the almonds in the oven, spread the nuts in a single layer on a shallow baking dish (or cookie sheet). Bake at 350° for about 3 to 4 minutes or until golden brown, stirring occasionally.
Be sure to keep a close watch, because they will burn very quickly!
Baking Tip
When making these Clafoutis, to prevent the edges from becoming too dark when baking, apply a pie crust shield about halfway through baking.
