The pineapple, raspberries, pecans and coconut combine to make an amazing flavourful fresh fruit dip!
Ingredients
Note - to toast the coconut, place the coconut in a small skillet on medium heat, stirring constantly (to avoid burning), for a few minutes, or until toasted.
1 cup cream cheese (can use less fat cream cheese)
1/4 cup icing (confectioner's) sugar
1/4 cup milk
1/2 marshmallow cream
1 cup crushed pineapple, well drained
1/2 cup *toasted coconut
1/8 cup fresh raspberries
1/4 cup pecan pieces
Directions
In a bowl, combine the cream cheese and powdered sugar and mix with a fork until well combined.
Gradually add the milk, a little at a time, continuing to stir until smooth.
Stir in the marshmallow cream, pineapple, toasted coconut, raspberries and pecans.
Chill for a few hours before serving.
Serve with prepared fruit of your choice. Dip your fruit...and enjoy!
Store any unused fruit dip in the fridge.
Yummy!
